Beet Brownies

1/2 cup beet puree (Love Beets or Melissa’s brand)

1/3 cup pure maple syrup

2 eggs

1 teaspoon vanilla

1/2 cup dark chocolate chips, melted

1/4 cup dark chocolate chips (topping)

1 cup almond flour

2 Tablespoons coconut flour

1/3 cup unsweetened cocoa powder

1/4 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

Instructions:

Preheat oven to 350 degrees.

Add coconut oil to 8×8 baking pan

Mix all dry ingredients in bowl, except for the chocolate chips. Set aside.

Prepare beet puree by placing 4-5 small pre-cooked beets in food processor. Blend until smooth.

In a separate bowl, mix wet ingredients, whisk until blended.

Combine wet and dry ingredients together.

Microwave 1/2 cup dark chocolate chips for melting (1 minute 30 seconds; stirring every 30 seconds until smooth chocolate texture appears). Add melted chocolate with all other ingredients.

Pour brownie batter in pan, spread evenly. Bake approximately 20 minutes or until toothpick comes out clean.

Top with remaining chocolate chips for serving.
