Quinoa, Black Bean, Red Pepper Salad

1/2 cup quinoa

1 1/4 cup vegetable broth

1 Tablespoon olive oil

garlic powder

ginger

cumin

1 red pepper, diced

1 can black beans, drained

1 small onion, diced

cilantro – mined into dish or as garnish

 

Instructions:

Place quinoa in a strainer; drain until water is clear 

Bring 1 cup vegetable broth to boil; add quinoa, return to boil 

Reduce heat to simmer – 20 minute or until tender

Heat oil, peppers, onion

Add preferred amount of garlic, ginger, and cumin to sautéed veggies

Stir in beans and remaining 1/4 cup broth

Fluff in quinoa and add cilantro to finish
